Heat large nonstick skillet over medium heat until hot. Add Ground Beef; cook 8 to 10 minutes, breaking beef into 1/2-inch crumbles and stirring occasionally.

Cooking times are for fresh or thoroughly thawed Ground Beef. Ground beef should be cooked to an internal temperature of 160ºF. Color is not a reliable indicator of ground beef doneness.
Combine ground beef with half can of enchilada sauce and 1 cup Colby-jack cheese.
Spread 1/4 cup enchilada sauce over 9x13 baking dish to just cover.
Spoon ground beef mixture into tortillas, wrap them tight and place tightly into 9x13 baking dish.
Cover with the rest of enchilada sauce and sprinkle with remaining cheese 350 for 15 minutes.
