Holiday Prime Rib Roast

Ingridents

3 lb. rib roast
3-4 tbsp Olive oil 
Salt
Pepper
Parsley (dried or fresh)


Directions

Preheat your oven to 350 F.   Rub rib roast with olive oil, entirely covering the surface. Combine spices to taste. Cover all sides of roast with spice mix.   Place roast fat side up in center of roasting pan on top of roasting rack.   Cook it to 135 F, using a meat thermometer to verify internal temperature. Remove from oven. Tent with foil and let roast set for about 10 min. Temperature will rise to 145 F, a perfectly medium rare doneness.
